Way too cold (practically freezing) to get them all. I'd guess half are still out there. Nevertheless, they need to be dug earlier. They've already started growing. You can see the bottoms elongating into roots, and some getting that reddish business. They've lost some of their sweetness, and gotten a bit starchy. I guess that unlike Jerusalem Artichokes, they would be better dug in the fall. The ones I dug last fall also cleaned up easier.
I was surprised to find them deeper than Jerusalem Artichokes.
Got to admit, chinese artichokes are unsurpassed in the "cute" department.
